He explained his inspiration, “Twenty years ago, I lived in southern California and frequented this hole-in-the-wall Mexican joint on the beach called 'Gringos.' There was always a line out the door, and you could smell the authentic Mexican food from blocks away.”

“Pancho and Miguel were cooking the good food in the kitchen with Mariachi's playing on their tune box. The Sangria and Margaritas were flowing. I probably went there three times a week for years, and it was always the same and consistently good.”

“Years later, I stumbled upon a similar place in Edinburgh, Scotland of all places, with fresh chips and salsa, great Mexican food and a funky vibe. This idea stayed with me. So after all these years, we were inspired to fix this place up, give it some funk and create our own take on 'Gringos.'”
